Day 11 - Crispy Korean Pancakes
I must admit, I was dreading this recipe. I don’t do pancakes well. I have been known to have complete meltdowns when cooking pancakes. So……the first one I followed Nagi’s instruction to the “T” and found out that I do not need oil in my pan for this. It was rather oily and didn’t spread out as much but I put it in the oven and tried another. I added a tiny bit of water to the batter and did not use any oil in the pan. This time, it worked! Crispy on the bottom and poofy on the top, yummy! Used the same veggies as in the recipe and wow! These pancakes are deceiving to the eye. They don’t look very big but oh my stars, are they filling! Another wondrous meal from Nagi!
On another note - the chicken for tomorrow is marinating. Huzzah!
