Dy 2 - Garlic Butter Shrimp
Holy smokaroonies! I started at 1:00 pm this afternoon making the Artisan Crusty Bread Nagi recommends to accompany this dish with. I made the bread using a cast iron fryer. You heat up the pan at 400 degrees for 30 minutes. Once the bread has risen (2-3 hours) you place it in the hot pan on parchment paper. Then seal tightly with foil (I didn’t have a lid to fit). Sealing it was a bit of a bother…..I finally placed a pizza pan on top of the foil so that it would create a tight seal. Well….it wasn’t that tight. The bread turned out but it didn’t raise as much as I would have liked. I ordered a proper cast iron bread baker with a lid that should be here tomorrow. The shrimp was delicious! So tender, not overcooked and the garlic butter sauce? I made double of the sauce to make sure we had enough to soak up with the bread. That was amazing! Silky and smooth with just the right hint of lemon. Why is it that it takes longer to cook something then it does to eat it? I demolished the dish in less than 15 minutes! And I am so full, I think I’m going to be saying those words quite often! I began marinating the chicken this evening for the Greek Chicken Gyros tomorrow. I can’t wait!
Day 1 - Vietnamese Baked Chicken
So, I marinated the chicken for 24 hours and just popped it into the oven. I also made the coconut rice and the leafy green salad she suggests to go with the chicken. It was very easy to make the coconut rice along with the Asian Sesame Dressing. So flipping easy and good!!!! The kitchen smells amazing! Only 45 minutes to go. Depending on how it goes, I may add how it tastes and all that later this evening. Or in the morning, it’s been a very long day. Okidodies! It was absolutely worth the wait of marinating for 24 hours. The chick was so tender and juicy. The marinade flavor throughout! I am not one to normally do this but I actually ate all the chicken down to the bone! And the skin? Oh my stars! Crispy, sticky, juicy. I don’t do skin usually but I ate all of the skin, too! And the coconut rice was so creamy and smooth and perfect with the chicken. Small salad with the Asian Sesame Dressing? Perfect accompaniment. My stomach is full and I think I should go for a walk. Day one down.
