Day 5 - Crispy Baked Chicken Tenders
I thought that today I would catch up on yesterdays recipes but it turns out that as a 63 year old woman, I needed to just chill for the day. So I will catch up tomorrow….perhaps. Today I made the chicken tenders which I told Mike that it will be very difficult to go back to store bought chicken tenders after this recipe. The trick is to toast the panko bread crumbs prior to assembly. Makes it sooooo crunchy! And tasty, 1 Tbs Mayo, 1.5 Tbs dijon mustard, 1 egg, 2 Tbs all purpose flour, kosher salt and pepper (1/2 and ¼ if I remember correctly. That’s the batter. Yep, it will be very difficult to go back to store bought chicken tenders! Tomorrow is Swedish Meatballs, yum!
